What (To Do With) The Duck?

This is less an actual post than a request for input. I have had, for a while now, a duck in my freezer. I bought it at my son's request, but never prepared it because... I don't know what to do with it! The duck came packaged with a packet of sauce. But naturally (or, unnaturally, as it turns out) the sauce is full of stuff I don't want to eat or feed my family. So, I figured I would just check with all of you to see if you have any recipes you love for preparing duck. I don't have time to go surfing the net for recipes right now, so I'm really hoping your collective wisdom will come through for me! Whaddaya say?

  1. Ooh...I wish I could help! I have fixed duck breasts, and that's all. I think roasting it would be the best thing, but I know there are many ideas on HOW to roast a duck, and I don't know any of them!

  3. I've never had a duck to cook, but if I did, I guess I'd have to get out my copy of Joy of Cooking and look it up. I might not follow their recipe exactly, but I trust them to have a good one.

  4. Definitely roasted. Roast duck is delicous! I've never done it myself, though, so I don't know if it's any different from roasting a chicken.

  5. Leigh, I don't know why I didn't think of that. (doh!) I have my grandmother's old copy and it does have several recipes for duck, including "Roast Bigarade" which apparently involves an orange, currant jelly, boiling consomme, and Madeira among other things. Sadly, I have none of that. Well, maybe an orange. Regular roast duck for us.

    Word Vixen, I've only had duck once. The kids liked it (both of them- amazing!). I thought it was okay. But I don't think it was roasted. It'll be an adventure. :)

  6. Thanks so much for taking the time to leave me a comment on my blog. This is my first time to visit here and oh my I would be no help with cooking a duck I'm afraid. But I do know my husband has eaten it a few times out in a restaurant and it was roasted and he really enjoyed it! Nice to "meet" you! ~Lili

  7. Maggie- I've had duck twice. The first time was at a Chinese stand in an open air market and it was horrible! The second time was at a local diner, plainly roasted, and absolutely delicious. I want to try it myself, but duck is an expensive bird to screw up! :-)

  9. Well, I haven't make the duck yet because my (almost new) oven quit and I haven't had time to deal with it because I've been in midterm exams. We've been eating out of the toaster oven, which has actually worked out fine- but the duck is too big to fit in there. I'll let you know how it goes when I get that bird cooked.
