I try to cook with less fats and less salt, but there has to be some give because flavor is necessary as well. I also have certain foods that I must avoid due to allergy or because of medication and that is a concern as well.

ReplyDeleteI use sea salt. I also can a lot of what we eat in the winter - beans, tomatoes, jams, chutneys, fruit and I freeze quite a bit. I've been canning more than 40 years and absolutely love the process as well as the eating of the work of my hands and heart.
ReplyDeleteMy biggest challenge seems to be even though I am a very careful eater, watch my starch, fat etc. eat tons of fresh fruit and vegetables and eat very little meat. I can't seem to lower my cholesterol and I don't want to take medications.

It's when I fix something I love that I have a hard time limiting myself. I'm a taste-as-you-cook type of person and it's hard to change that habit, but I'm working in it.

ReplyDeletePurchasing local organic foods, particularly in non-summer months, is difficult. You wouldn't think so since ag is top industry in my county. At least organic farming is taking hold here. It's ironic that I can buy one organic farm's stuff at whole food stores in other cities, but not at my local grocery stores. I guess the local stores can't make a good profit because the percentage of folks that shop local and organic foods is still small.

It takes a lot of time to prepare and steam fresh vegetables, cook brown rice as opposed to polished or parboiled rice, roast a chicken or some lean beef, or bake your own beads and muffins. I'll take the time on the weekends to those kind of things, but leftovers only go so far. Give me more time and I can eat healthier!

My biggest challenge is feeding everyone, my husband's Dr has put him on a low carb diet for the rest of his life. My husband used to love to cook--and did 75% of the cooking--now he won't go near the kitchen and he's always grumpy. I don't really eat meat, and I have three teens. My husband claims he is fine just eating meat and vegetables, the kids and I are not.

My biggest problems are not drinking enough water, and probably having too large of a percent of my diet being starches.
ReplyDeleteI crave carbs, and soft squishy food as opposed to raw and crunchy.

My biggest healthy eating challenge is living with a family of skinny people who need to gain weight. And my love of ice cream is a definite downfall too.
ReplyDeleteMy biggest challenge is feeding a family of six with such different eating likes. It is hard to eat a large enough variety when you are trying to please that many.
